squash? My neighbor gave me a bunch and it has to be used in the next day or so. Kid friendly is even better because i have one really picky child!

You can make zucchini bread, that's pretty kid friendly. You can also cut it, bread it, and fry it and serve with a tomato sauce dip.
summer squash, that's a tough one. I have one that likes it sauteed in olive oil, two that like it in a casserole/side dish like you can get at Black Eyed Pea restaurants, and two that won't touch it at all.
They can also be eaten raw with a ranch dip.

didn't think of bread..duh..lol. I'll have to look up recipes. i've never made it before. I've fried it that's about it:)
just olive oil with the squash? no other seasonings? what do you do wiht the side dish?

Yep zucchini bread is pretty kid friendly taste like banana nut bread. I saute my yellow squash in some butter add some onions and chicken stock salt and pepper and just smother it down.

Not really sure how kid friendly it is, but I love stuffed zucchini....just cut it in 1/2 stuff it with spanish rice & bake. Another thing you could do is make cutlets out of it, ya know like fried chicken...slice it up bread it with bread crumbs & some seasonings & fry it or bake it.

The summer squash recipe is:
5 pds yellow squash 3 tbls melted butter 2 eggs 1 cup bread crumbs 1/4 cup sugar 2 tbls dehydrated onions dash of black pepper
Wash squash, cut off ends and cut each into 4 pieces. Boil 15-20 minutes until tender. Drain and mash. In a large bowl, mix squash with remaining ingredients. Spread in a 9x13 casserole dish and bake at 350 for 20 to 25 minutes.
This is the recipe but I usually cut it in half.

Zucchini Pancakes. 2 zucchini, shredded 1 cup of flour 1 egg lightly beaten splash of milk salt and pepper mix all ingredients, adding zucchini last and folding it into the batter add milk or flour as needed to get the consistency you want heat about 1 inch of olive oil in a pan and cook pancakes. put finished pancakes on paper towels to absorb excess oil. sprinkle with grated Parmesan cheese.

We have TONS of zucchini. We put it in spaghetti sauce or sauté it and just serve it as a veggie side.

I saute onions in olive oil and cut up potatoes into small chunks, add them to the pan, and when they are half way cooked, I put cut up zucchini in. Cook covered until cooked through, stir occasionally so it doesn't burn. Add salt and pepper when done, voila! Sauteed potatoes and zucchini. It's my grandma's recipe and very addicting!

Shannon, you can also grate up your zucchini and freeze it! Then you can make that yummy bread or loaf later in the fall or winter too!!!
I love that chocolate recipe too! Angela

I'm kind of late on this but you can use zucchini in pretty much anything you use yellow squash for. Zucchini casserole is good but I usually mix crookneck yellow squash with it. Just add extra cheese and kids will love it
