you can also freeze these veggies if you happen to have more you need to use. i have done it grated to make squash patties (fried with egg, flour and cornmeal dh loves them so i found a recipe online) and squash cassoroles. the easiest way to do them sliced is to cut them in slices lay them on cookie sheet in freezer til frozen then take out and put in freezer bags then they don't stick together! i have tons of corn and squash in the freezer from our garden!
